After researching on Solanaceae out of a gardener's wonder, and then writing on Mexican food for my cooking-blogger husband, increasing the wonder, I had to write on the agriculture of the Maya. Farmers before recorded history can be thanked for the domesticated species responsible for much of global food production. I feel these men and women of the soil practicing their sustainable forms of agriculture and taming the unproductive wild grasses with their puny seeds, to form our golden milliepitte (maize) of today are not acknowledged, and neither is the refinement, complexity or historical depth of Mexican cuisine.
